Achille Pinna, I was born in Carbonia on September16, 1968 and with me also the passion for cooking. I have always loved food and learned to recognize and develop the finest ingredients and transform them to the finest dishes. Since I was a little child, I was always around the kitchen of the family restaurant built, along with a small hotel of 16 rooms, by my father who was involved in all aspects of the hotel including running the kitchen...those were different times but, the spirit remains true. Whilst growing, equally the passion for my work grew with me. My training began at the Cooking School in Piemonte, Northern Italy, and continued in the Cooking School in Arzachena, North Sardinia. After my studies I returned to my hometown, Sant'Antioco, to join my mother who had, by then taken leadership of the kitchen. As time progressed, I increasingly felt the need to challenge myself to develop and improve my knowledge by attending some specialized courses and enjoyed experiences of alternative cuisine around the world: Brazil, Russia, Kazakhstan, Japan, Thailand, Mexico, just to mention a few. Most significant to me were my experiences in the Orient, with Thailand and Japan, particularly, having made a great impression. Along my development path I have always cooked freely, choosing and using only the best raw material. During these times, I had neither leaders nor Masters , only great fellow friends from all over the world, with whom I collaborated with and deepened my skills. I live on a beautiful Island, Sant'Antioco, where my Restaurant is located. Both from the sea and the land I can find raw materials of the highest order: from shellfish to the prized bluefin tuna. On the Island itself, local farms raise excellent cattle, sheep and goats fed on salt grass. We have ancient vineyards providing great wines and the volcanic soil cultivate great vegetables. ...What can Isay... I have travelled aroundt heworld,and I still do, but... I love my Island
